Healthy Spaghetti Squash Bowl Recipe

As someone who is always on the hunt for ways to get in more vegetables, I’m a BIG fan of spaghetti squash. When I make the family a pasta meal, I make this Healthy Spaghetti Squash Bowl recipe for myself. It allows me to have the flavours that I love from a good pasta meal without the bloat that always follows afterwards for me.

Don’t be frightened of spaghetti squash if you’ve never cooked it; it’s very forgiving and almost always comes out perfectly.

Healthy Spaghetti Squash Bowl Recipe

INGREDIENTS

  • 1 spaghetti squash, medium, cut in half
  • 2 tbsp butter
  • 1 ½ cup spaghetti sauce (canned or homemade)
  • 1 cup Mozzarella cheese
  • ¼ cup parmesan cheese
  • ½ cup mushrooms, sliced
  • 1 tsp Italian seasoning
  • as desired salt and pepper

Healthy Spaghetti Squash Bowl Recipe

PREPARATION

  1. Begin by preheating your oven to 375.
  2. Cut the spaghetti squash in half, lengthwise and use a spoon to scoop out the seeds.
  3. Spread butter on each half, including in the hollow where the seeds were and then sprinkle with pepper to taste.
  4. Place spaghetti squash halves on a baking sheet and bake for approx 40-45 minutes. Once finished, let cool while you make your sauce.
  5. With a fork, begin to scrape away at the insides of the squash, creating the strands of squash to come away from the sides and resembling pasta spaghetti. Go as close as you can to the rind of the squash without going through or poking a hole.
  6. In a bowl, take all squash strands and mix in your favorite sauce. Add the mushrooms and the Italian seasoning, salt and pepper. Mix well
  7. Scoop the mixture back into the shell of the squash. Sprinkle over the mozzarella cheese and parmesan cheese
  8. Bake in the oven for approximately 5 minutes.

  1. oh my word that looks absolutely delicious!! I love the idea of this. My girls are pasta lovers and this is such a healthier way of doing it . I wonder if they would notice the difference? dont know if you dont try :)
