Well hello there, allow me to make you drool here friends. Seriously…how could these Cheesy Loaded Potato Balls be wrong?
This is an appetizer recipe that I know you’re all going to enjoy. It’s simple and you can use up any leftover mashed potatoes you have in the fridge! These balls combine so many of my favourite things; bacon, green onion, potatoes and of course CHEESE!

Cheesy Loaded Potato Balls Appetizer Recipe
INGREDIENTS
- 2 cups cold mashed potatoes
- 1/2 cup sour cream
- ¼ cup minced green onion
- salt and pepper to taste
- 1/2 pound cooked bacon, crumbled
- 24 cubes cheddar cheese
- 2 eggs, beaten
- 2 cups bread crumbs
PREPARATION
- Preheat oven to 400 degrees F.
- In a bowl, mix the mashed potatoes, sour cream, green onion, salt and pepper and bacon together.
- Using a spoon, scoop out a 2 inch portion of mashed potatoes. Press one cube of cheddar into it and press potatoes until it covers the cheese. Roll into a ball and repeat for remaining cheese cubes.
- Dip potato ball into the egg, roll in breadcrumbs until covered and set onto a parchment lined pan.
- Bake for 20 minutes and serve!
