Baked Chicken Nachos with Tomatillo Salsa & #ChickenDotCA Giveaway

It’s the week before Christmas and all through out house, the drills are whirring, the paint is rolling and the renos are coming along very well. While this makes me happy it has put a serious damper on my Christmas cooking and baking. I am surrounded by construction equipment, unwrapped presents stashed in closets and a list a mile long. To say that I feel a bit out of sorts is an understatement….and so I do what anyone who needs to make a plethora of appetizers for Christmas gatherings would do…I am sitting in my new lovely dining room bookmarking the recipes I’m going to make over a fine cup of coffee.

One of the sites I use to find my recipes is Chicken.ca. It’s the Chicken Farmers of Canada website, as a Chicken Farmers Health Ambassador, I’ve had the pleasure of bringing you all information and recipes all year long. Not only do I bring it to you, I regularly use their recipes to create meals for my family and each time we’ve been pleased with the results.

My appetizer list is staying small this year, I’m looking for just 5 to make for our family as our entertaining has been drastically reduced because of the tight time line I have these renovations on. Topping the list is this Baked Chicken Nachos with Tomatillo Salsa which looks simple and something the kids will like.

Baked Chicken Nachos with Tomatillo Salsa

This would be a simple dish to throw together, either as an appetizer or a main dish. Corn chips/tortillas count as a whole grain.   1. I like mini chicken skewers. They are so simple to put together and easy to make a variety of flavours using different sauces.

  4. I can’t really understand people liking chicken wings – there’s very little meat on them! I’m for chicken kebabs, lovely juicy chicken and with a sweet & sour sauce as a dip. Delicious :-)
